Spicy Meatball Pizzaiola

The Lazy Chef is embarking on a new enterprise to deliver innovative recipes to her three loyal readers: the roving test kitchen!

No one knows where the cooking will happen, but the important thing is that we deliver delicious results to you – and the first thing on the menu is Spicy Meatball Pizzaiola. And, what makes this different from any other pizzaiola you may have had? Well … lots of things, so let’s get started.

The Basic Tools

The Ingredients

  • 1 1/2 pounds ground beef

  • 1/2 cup quick oats, minced

  • 1/2 small onion, minced

  • 3 cloves garlic, minced

  • 3 oz. mozzarella, cubed

  • 3 tbsp. Worcestershire sauce

  • 3 tbsp. chili sauce (Sriracha)

  • 1 tbsp. butter

  • 1 tbsp. basil

  • 2 tsp. thyme

  • 2 tsp. rosemary

  • 2 tsp. parsley

  • Salt and pepper to taste

The Method

Part 1 (Prep): Put all the ingredients listed except the cheese and butter in your mixing bowl and mash it together with your hands. Cut the mozzarella into small 1/4-inch cubes. Once complete, take a 1-ounce scoop of meat, press a cube of mozzarella into it and then roll it into a meatball. Repeat until all the meat is used, placing the meatballs on a tray or baking sheet. Set the meatballs in the fridge for at least 45 minutes to firm up.

Part 2 (Cook): Remove the meatballs from the fridge and brown them in your skillet with butter, turning constantly for 6-8 minutes. (You may have to do this in two batches.) Once dark brown on all sides, place them in the baking pan and pop them in the oven for 8-10 minutes at 350ºF.

You can serve these with pasta and sauce, with sauce for dipping or simply straight up – they’re that good.
