So, who wants to start 2015 with an easy, healthy recipe you can take to the New Year's Eve party tonight? Yeah? Okay!Black-eyed peas are a traditional New Year’s dish, particularly in the South, but we’re leaving out the bacon this year for a healthier start on our 2015 fitness resolutions.Don’t worry! It’s still delicious, but don’t tell any of our friends below the Mason-Dixon Line – they don’t take kindly to Yankee meddling when it comes to their fine recipes. And, we don’t blame them! That’s why we’re making this as traditional as we can while keeping the calories low. Hot Black-Eyed Peas Ingredients
- 1 lb. black-eyed peas- 2 cups water- 12 oz. stewed tomatoes- 4 oz. pickled jalapenos- 4 cloves garlic, chopped- 1 medium onion, chopped- Crystal (brand) hot sauce, a few shakes- Salt and pepperMethod
First, soak your peas in a pan
covered with a few inches of water overnight. Once done, drain and rinse them and put them back in the pan. To the pan, add the remaining ingredients and simmer for an hour.Check for tenderness after 45 minutes. If needed, add more water. Once they are cooked, use a spoon to mash some into the sides of the pan to give the dish added creaminess.Serve hot with greens (see below).Greens Ingredients
- 2 lbs. collard greens- 2 cloves garlic, chopped- 2 tbsp. fresh lemon juice- 1 tbsp. olive oil- 1 tbsp. butter- PepperMethod
Stem and de-rib greens, and chop them up. Boil greens in an uncovered pan for 15 minutes and then drain, making sure to squeeze out the excess water. Place drained greens in a saute pan with olive oil, butter and garlic, and saute over medium heat until tender, about 5 minutes.Toss with lemon and pepper, and serve hot with black-eyed peas for health, wealth and prosperity in the New Year!
